INGREDIENTS

FOR THE CAKE:

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon pure vanilla extract
  • 1½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 cup chopped pecans or walnuts (optional)
  • ½ cup semi-sweet chocolate chips (optional)

 

FOR THE GOOEY TOPPING:

  • 1 cup unsalted butter
  • 1/3 cup unsweetened cocoa powder
  • 4 cups powdered sugar
  • 1 tablespoon pure vanilla extract
  • 1 cup mini marshmallows
  • ½ cup chopped pecans or walnuts (optional)

 

INSTRUCTIONS 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the butter mixture, combining until well incorporated. If desired, fold in the chopped nuts and chocolate chips for added texture and flavor.
  5. Pour the batter into the prepared baking pan, spreading it evenly to the edges.
  6. Bake the cake in the preheated oven for approximately 25 to 30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. While the cake is baking, prepare the gooey topping. In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the cocoa powder until smooth.
  8. Remove the saucepan from the heat and stir in the powdered sugar and vanilla extract until the mixture is creamy and lump-free.
  9. After removing the cake from the oven, immediately sprinkle the mini marshmallows evenly over the surface.
  10. Pour the warm gooey topping over the marshmallows, ensuring even coverage.
  11. Optionally, sprinkle additional chopped nuts on top for an extra crunch.
  12. Allow the cake to cool and the topping to set before serving. For an authentic touch, enjoy it with a scoop of vanilla ice cream or a glass of cold milk.
