I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

This will open your eyes in the morning! It’s one of my favorites-I enjoy breathing fire.

Yield: 1 serving, with 5 grams of carbohydrates and 1 gram of fiber, for a total of 4 grams of usable carbs and 25 grams of protein.

 

INGREDIENTS 

  • 1 tablespoon butter
  • 2 eggs, beaten
  • 2 ounces jalapeno Jack cheese, shredded or sliced
  • 2 tablespoons salsa
  • Hot sauce (optional)

 

INSTRUCTIONS 

  1. Make your omelet according to Dana’s Easy Omelet Method, placing the filling over half of your omelet when you get to step 6.
  2. Cover, turn the burner to low, and cook until the cheese is melted (3 to 4 minutes).
  3. Follow the directions to finish making the omelet.
  4. Top with salsa and hot sauce (if using).
