INGREDIENTS:

  • 8 oz Tri-color Pasta Spirals*
  • 6 Tomatillos, small size**
  • 1/2 Jalapeno Chile, seeded and finely chopped***
  • 20 oz Pineapple Chunks (canned in their own juice)
  • 1 Tbs Fresh Cilantro, snipped
  • 2 Tbs Vegetable Oil
  • 1/2 tsp Grated Lime Peel
  • 1/4 tsp Salt

INSTRUCTIONS:

  1. Cook the pasta as directed on the package until it is al dente. Drain the cooked pasta and rinse it with cold water. Drain again to remove excess water.
  2. Cut each tomatillo into 8 wedges and set them aside.
  3. Seed the jalapeno and finely chop it.
  4. In a large mixing bowl, combine the cooked pasta, tomatillos, chopped jalapeno, and pineapple chunks. Toss the ingredients together to mix them evenly.
  5. In a separate bowl, mix the reserved pineapple juice, vegetable oil, grated lime peel, and salt to create the dressing.
  6. Pour the dressing over the pasta mixture and toss everything together to coat the ingredients thoroughly.
  7. Cover the pasta salad and refrigerate it for at least 2 hours to chill and allow the flavors to meld.
