- 1 cup Cheddar cheese (4 ounces), cut into 1/2 inch cubes
DRESSING:
- 1/2 cup Vegetable oil
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 2 tbsp Lemon juice
- 1 tbsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1/2 tsp Garlic, fresh, finely chopped
- 1 tbsp Parmesan cheese, freshly grated
INSTRUCTIONS:
- Cook the macaroni according to the package directions until al dente. Drain the cooked macaroni and set aside.
- In a large bowl, combine the broccoli flowerets, chopped onion, sliced zucchini or yellow squash, and red pepper strips. Add the cheddar cheese cubes to the bowl as well.
