INGREDIENTS:

  • 8 oz Shell macaroni, medium size, uncooked
  • 2 cups Broccoli flowerets
  • 1/2 cup Onion, chopped (1 medium)
  • 2 cups Zucchini OR Yellow squash, sliced 1/4 inch thick
  • 1 Red pepper (medium), cut into strips
  • 1 cup Cheddar cheese (4 ounces), cut into 1/2 inch cubes

 

DRESSING:

  • 1/2 cup Vegetable oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 2 tbsp Lemon juice
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/2 tsp Garlic, fresh, finely chopped
  • 1 tbsp Parmesan cheese, freshly grated

 

INSTRUCTIONS:

  1. Cook the macaroni according to the package directions until al dente. Drain the cooked macaroni and set aside.
  2. In a large bowl, combine the broccoli flowerets, chopped onion, sliced zucchini or yellow squash, and red pepper strips. Add the cheddar cheese cubes to the bowl as well.
  3. Stir the hot cooked macaroni into the bowl with the vegetables and cheese. Allow the mixture to cool for about 10 minutes in the refrigerator.
  4. In a separate medium bowl, prepare the dressing. Whisk together the vegetable oil, salt, pepper, lemon juice, Dijon mustard, Worcestershire sauce, and finely chopped garlic.
  5. Pour the dressing over the salad in the large bowl. Toss the ingredients together to coat them evenly with the dressing.
  6. Sprinkle the salad with freshly grated Parmesan cheese.
  7. Serve the pasta salad immediately or refrigerate until ready to serve.
