Mango & Vanilla Cupcakes are a delightful fusion of tropical flavors and classic vanilla, creating a perfect balance of sweetness and fruitiness. The art of making cupcakes dates back to the 18th and 19th centuries when cupcakes were referred to as “number cakes” due to the simple measurements used in the recipes. Over time, these small cakes gained popularity and evolved into the cupcakes we know today. The addition of various flavors and frostings, such as vanilla and buttercream, allowed for endless possibilities in cupcake creations.

INGREDIENTS

Cupcakes:

  • 1 & ⅓ cup all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, melted and cooled
  • 1 cup sugar
  • 1 large egg
  • ¼ cup coconut flavored yogurt (or vanilla-flavored yogurt)
  • ¾ cup milk
  • 1 tsp vanilla extract

 

Buttercream:

  • ¾ cup unsalted butter, room temperature
  • ½ cup mango puree
  • ¼ tsp salt
  • ½ tsp vanilla extract
  • 4 cups icing sugar

 

INSTRUCTIONS

Cupcakes:

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with 12 paper liners.
  2. In a large bowl, toss together the all-purpose flour, baking powder, baking soda, and salt until well combined.
  3. In a separate medium bowl, whisk the melted butter with the sugar until smooth.
  4. Add the egg, coconut flavored yogurt (or vanilla-flavored yogurt), milk, and vanilla extract to the butter-sugar mixture. Stir everything together until well combined, making sure not to over-mix the batter.
  5. Gently pour the wet ingredients into the dry ingredients, and mix until the batter is smooth and free of lumps.
  6. Fill each paper liner about ¾ full with the cupcake batter.
  7. Bake the cupcakes in the preheated oven for approximately 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  8. Once baked, remove the cupcakes from the oven and allow them to cool completely before frosting.

 

Buttercream:

  1. In a mixing bowl, whip the unsalted butter until it becomes light and fluffy.
  2. Add the mango puree, salt, and vanilla extract to the whipped butter. Mix until the ingredients are somewhat incorporated.
  3. Gradually add the icing sugar, one cup at a time, blending well after each addition. Continue to mix until the buttercream reaches a smooth and creamy consistency.

 

Assembling the Cupcakes:

  1. Once the cupcakes have cooled completely, frost them with the mango buttercream.
  2. You can spread the buttercream using a spatula or pipe it onto the cupcakes using a piping bag for a more decorative look.
  3. Optional: Garnish each cupcake with a slice of fresh mango or a sprinkle of shredded coconut to enhance the tropical flavor.
