INGREDIENTS
- 2 large or 3 medium ripe mangoes, peeled, pitted, and cut into chunks
- 2 tablespoons strained fresh lime juice
- ⅛ teaspoon kosher salt
- ½ cup 1:1 Simple Syrup, cooled
INGREDIENTS
- Put the mangoes in a blender or food processor and purée until smooth.
- Strain through a fine-mesh strainer into a medium bowl, pressing on the solids to extract as much of the purée as possible.
- Stir in the lime juice and salt.
- Add ¼ cup simple syrup; taste and add more if needed.
- Chill before serving.
