Recently a friend was telling me how good her broccoli with lemon is. Rather than boiling or steaming it, she tosses it with lemon juice and roasts it, then sprinkles it with cheese. Now I have a new favorite way of cooking this vegetable.

Lemon Roasted Broccoli is a vibrant and flavorful dish that takes the humble broccoli to new heights. This recipe showcases the natural sweetness of the broccoli while infusing it with the tangy and refreshing notes of fresh lemon juice. INGREDIENTS

  • 1½ pounds broccoli, trimmed and cut into small florets
  • ¼ cup extra-virgin olive oil
  • 1–2 tablespoons fresh lemon juice
  • Salt and freshly ground pepper
  • ⅓ cup freshly grated Pecorino Romano

 

INSTRUCTIONS

  1. Preheat the oven to 425°F.
  2. In a baking pan large enough to hold the broccoli in a single layer, toss the florets with the olive oil, lemon juice, and salt and pepper to taste.
  3. Bake the broccoli in the preheated oven for 15 minutes, or until lightly browned and almost tender.
  4. Toss the broccoli once during baking to ensure even cooking.
  5. Sprinkle the grated Pecorino Romano cheese over the broccoli.
  6. Bake for an additional 5 minutes, or until the cheese is melted and the broccoli is tender.
  7. Remove from the oven and serve the roasted broccoli as a flavorful side dish.
