Lemon Chicken Stir Fry

Serves: 3-4

 

INGREDIENTS:

  • 1 lemon
  • 1/2 cup chicken broth
  • 3 tbsp. fish sauce
  • 2 teaspoons arrowroot flour
  • 1 tbsp. coconut oil
  • 1 pound boneless, skinless chicken breasts, trimmed and cut into 1-inch pieces
  • 10 ounces mushrooms, halved or quartered
  • 2 cups snow peas, stems and strings removed
  • 1 bunch scallions, cut into 1-inch pieces, white and green parts divided
  • 1 tbsp. chopped garlic

 

INSTRUCTIONS:

  1. Grate 1 tsp. lemon zest. Juice the lemon and mix 3 tbsp. of the juice with the chicken broth, fish sauce, and arrowroot flour in a small bowl.
  2. Heat coconut oil in a skillet over high heat. Add the chicken and cook, stirring occasionally, until just cooked through. Transfer the cooked chicken to a plate.
  3. In the same skillet, add mushrooms and cook until they are tender.
  4. Add snow peas, chopped garlic, scallion whites, and the lemon zest to the skillet. Cook, stirring, for about 30 seconds.
  5. Pour the prepared broth mixture into the skillet and cook, stirring, for 2 to 3 minutes until the sauce thickens.
  6. Add scallion greens and the cooked chicken along with any accumulated juices. Stir everything together to combine.

Serve the delicious lemony chicken stir-fry with mushrooms, snow peas, and scallions. Enjoy your flavorful and healthy meal!
