INGREDIENTS:
- 1 lemon
- 1/2 cup chicken broth
- 3 tbsp. fish sauce
- 2 teaspoons arrowroot flour
- 1 tbsp. coconut oil
- 1 pound boneless, skinless chicken breasts, trimmed and cut into 1-inch pieces
- 10 ounces mushrooms, halved or quartered
- 2 cups snow peas, stems and strings removed
- 1 bunch scallions, cut into 1-inch pieces, white and green parts divided
- 1 tbsp. chopped garlic
INSTRUCTIONS:
- Grate 1 tsp. lemon zest. Juice the lemon and mix 3 tbsp. of the juice with the chicken broth, fish sauce, and arrowroot flour in a small bowl.
- Heat coconut oil in a skillet over high heat. Add the chicken and cook, stirring occasionally, until just cooked through. Transfer the cooked chicken to a plate.
- In the same skillet, add mushrooms and cook until they are tender.
- Add snow peas, chopped garlic, scallion whites, and the lemon zest to the skillet. Cook, stirring, for about 30 seconds.
- Pour the prepared broth mixture into the skillet and cook, stirring, for 2 to 3 minutes until the sauce thickens.
- Add scallion greens and the cooked chicken along with any accumulated juices. Stir everything together to combine.
