Large Fiber Loaded Salad with Yogurt Dressing

Serves :1

 

INGREDIENTS:

  • 1 cup of spinach
  • 1 cup of shredded cabbage or lettuce. Cabbage has more substance.
  • Italian or Yogurt dressing
  • Cayenne pepper (optional)
  • Few sprigs of cilantro (optional)
  • 2 spring (green) onions (optional)

 

INSTRUCTIONS:

  1. Wash the spinach and shredded cabbage (or lettuce) thoroughly. Pat them dry with a paper towel or use a salad spinner to remove excess water.
  2. If using green onions, chop them into small pieces.
  3. In a mixing bowl, combine the spinach, shredded cabbage (or lettuce), and chopped green onions (if using).
  4. If desired, add a few sprigs of cilantro for extra freshness and flavor.
  5. Drizzle the Italian or Yogurt dressing over the salad. Use as much dressing as you prefer, depending on your taste.
  6. Optionally, sprinkle a pinch of cayenne pepper over the salad to add a hint of spice.
  7. Toss the salad gently to evenly coat the vegetables with the dressing and spices.
  8. Serve the salad immediately as a refreshing and nutritious side dish or a light meal.
