Serves: 4

 

INGREDIENTS:

  • 1 tbsp. coconut oil
  • 1 pound pork tenderloin, trimmed and cut into 1-inch pieces
  • 3/4 tsp. salt
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 teaspoons paprika
  • 1/4 tsp. crushed red pepper (optional)
  • 1 cup white wine
  • 4 plum tomatoes, chopped
  • 4 cups chicken broth
  • 1 bunch kale, chopped
  • 2 cups cooked white beans

 

INSTRUCTIONS:

  1. Heat coconut oil in a pot over medium heat.
  2. Add pork pieces to the pot, season with salt, and cook until the pork is no longer pink. Transfer the cooked pork to a plate and leave the juices in the pot.
  3. Add the chopped onion to the pot and cook until it turns translucent.
  4. Stir in paprika, minced garlic, and crushed red pepper (if using). Cook for about 30 seconds until fragrant.
  5. Add the chopped tomatoes and white wine to the pot. Increase the heat and stir to scrape up any browned bits from the bottom of the pot.
  6. Pour in the chicken broth and bring the mixture to a boil.
  7. Add the chopped kale to the pot and stir until it wilts.
  8. Lower the heat and let the stew simmer until the kale becomes tender.
  9. Stir in the cooked white beans, the previously cooked pork, and its juices. Simmer the stew for an additional 2 minutes to allow the flavors to meld.
  10. Serve the delicious pork and white bean stew hot, and enjoy!
