INSTRUCTIONS:
- In a stockpot, brown the minced beef along with the minced garlic.
- Stir in the beef broth, sliced carrots, and large tomatoes.
- Season the mixture with salt and black pepper.
- Reduce the heat, cover the pot, and let it simmer for about 15 minutes.
- Add the cooked beans along with their liquid and the cubed zucchini to the pot.
- Cover the pot again and continue to simmer until the zucchini becomes tender.
- Remove the pot from the heat and add the rinsed and torn spinach.
- Cover the pot again and let it sit for about 5 minutes to allow the spinach to wilt.
