Italian Beef Soup

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

INGREDIENTS:

  • 1 pound minced beef
  • 1 clove garlic, minced
  • 2 cups beef broth
  • Few large tomatoes
  • 1 cup sliced carrots
  • 2 cups cooked beans
  • 2 small zucchini, cubed
  • 2 cups spinach – rinsed and torn
  • 1/4 tsp. black pepper
  • 1/4 tsp. salt

 

INSTRUCTIONS:

  1. In a stockpot, brown the minced beef along with the minced garlic.
  2. Stir in the beef broth, sliced carrots, and large tomatoes.
  3. Season the mixture with salt and black pepper.
  4. Reduce the heat, cover the pot, and let it simmer for about 15 minutes.
  5. Add the cooked beans along with their liquid and the cubed zucchini to the pot.
  6. Cover the pot again and continue to simmer until the zucchini becomes tender.
  7. Remove the pot from the heat and add the rinsed and torn spinach.
  8. Cover the pot again and let it sit for about 5 minutes to allow the spinach to wilt.
  9. Serve the delicious and nutritious beef and vegetable soup.
