INGREDIENTS:
- 2 chopped onions
- 2 Tbsp. coconut oil
- 1 sprig dried thyme
- 2 1/2 pounds chopped meat from lamb neck
- 6 chopped carrots
- 2 tbsp. brown rice
- 5 cups chicken stock
- Salt
- Ground black pepper
- 1 bouquet garni (thyme, parsley and bay leaf)
- 2 chopped sweet potatoes
- 1 bunch chopped parsley
- 1 bunch chives
INSTRUCTIONS:
- Cook the onions in coconut oil on medium heat until they are tender.
- Add the dried thyme and chopped lamb meat to the onions. Stir to combine.
- Add brown rice, chopped carrots, and chicken stock to the pot.
- Season with salt, ground black pepper, and add the bouquet garni (thyme, parsley, and bay leaf).
- Cover the pot and cook the stew on low heat for 2 hours until the meat is tender and flavorful.
- After 2 hours, place the chopped sweet potatoes on top of the stew and continue cooking for an additional 30 minutes until the meat is falling apart and the sweet potatoes are tender.
- Garnish the stew with chopped parsley and chives before serving.
