Makes 2¼ cups
INGREDIENTS
- 1½ cups sour cream
- ½ cup prepared horseradish, drained
- 1 teaspoon fresh lemon juice
- 3 tablespoons thinly sliced scallion greens
- 1 tablespoon finely chopped fresh flat-leaf parsley
- Salt and freshly ground black pepper
PREPARATION
- In a small bowl, combine the sour cream, horseradish, lemon juice, scallions, and parsley.
- Season the mixture with salt and pepper to taste.
- Cover the bowl and set it aside in the refrigerator for at least 30 minutes to allow the flavors to develop.
- The horseradish sour cream can be made several hours ahead of time.
