Honeydew Melon Granita

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Luscious and light, honeydew granita is excellent when made with a storebought melon. But if you are lucky enough to get a melon from a farmers’ market or garden, you are in for an amazing treat.

YIELD: 1 QUART

INGREDIENTS

  • 1 medium-large honeydew melon (2½–3 pounds)
  • ¾ cup sugar
  • ¼ cup water
  • 1 tablespoon lemon juice
  • Pinch salt

PREPARATION

  1. Remove the seeds and rind from the melon, and chop the fruit into chunks.
  2. Combine all ingredients in a food processor or blender, and purée until very smooth.
  3. Refrigerate until chilled.
  4. Pour into a covered container and place in the freezer for 1 hour.
  5. Remove from freezer, and stir the frozen crystals into the center of the container with a fork.
  6. Return the container to the freezer, and repeat the process every 30–45 minutes, stirring carefully each time, until you have a fully frozen container of crystallized granita.
