Homestyle refried beans are a classic and comforting dish that complements many Mexican and Tex-Mex meals. This versatile side dish features pinto beans cooked with onions, garlic, and spices, then mashed to a creamy consistency. In this recipe, we’ll delve into the history and story of refried beans and provide detailed instructions on how to make them at home.

Refried beans, or frijoles refritos in Spanish, have a rich history rooted in Mexican cuisine. Beans have been a staple food in Mexico for centuries, with pinto beans being one of the most commonly used varieties. The term “refried” is actually a mistranslation of the Spanish word “refritos,” which means “well-fried” or “well-cooked.”

Traditionally, refried beans are made by cooking beans until they are soft and then mashing them with fat, such as lard or bacon drippings. The process of mashing gives the beans a smooth and creamy texture. Contrary to popular belief, the “refried” in refried beans does not mean the beans are fried twice. Instead, it refers to the cooking process of frying the beans after they are mashed.

Refried beans are a fundamental component of Mexican cuisine and are used in various dishes such as tacos, burritos, enchiladas, and tostadas. They add depth of flavor, creaminess, and protein to these meals, making them more satisfying and nutritious.

MAKES: 2⅔ CUPS

 

INGREDIENTS

  • ⅔ cup finely chopped onion
  • 4 teaspoons canola oil
  • 4 garlic cloves, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • 2 cans (15 ounces each) pinto beans, rinsed and drained
  • ½ cup water
  • 4 teaspoons lime juice

 

INSTRUCTIONS

  1. In a large saucepan, sauté the finely chopped onion in canola oil over medium heat until tender and translucent.
  2. Stir in the minced garlic, ground cumin, salt, and cayenne pepper. Cook and stir the mixture for about 1 minute, allowing the spices to become fragrant.
  3. Add the rinsed and drained pinto beans to the saucepan. Use a potato masher or the back of a fork to mash the beans until they reach your desired consistency. Some prefer a chunkier texture, while others prefer a smoother consistency.
  4. Pour in the water and continue cooking and stirring the beans until they are heated through and the water is absorbed. This step helps blend the flavors and ensures the beans are not too dry.
  5. Remove the saucepan from the heat and stir in the lime juice. The lime juice adds a refreshing tang to the beans, enhancing their flavor.
  6. Refried beans are now ready to be served as a delicious side dish or used as an ingredient in various Mexican dishes. They can be enjoyed on their own or used as a filling for tacos, burritos, or enchiladas. Customize them with your favorite toppings such as shredded cheese, chopped cilantro, or a dollop of sour cream.
