INGREDIENTS

  • 1 pound mixed dried fruit (about 4 cups)
  • ¾ cup small pearl tapioca
  • 6 cups water, divided
  • 5 apples, peeled and cubed
  • 1 cup sugar
  • Ground cinnamon

 

INSTRUCTIONS

  1. In a large saucepan, combine the mixed dried fruit, small pearl tapioca, and 4 cups of water. Cover the saucepan and allow the mixture to stand overnight. This step helps the dried fruits and tapioca to soften and rehydrate.
  2. Stir in the peeled and cubed apples, sugar, and the remaining 2 cups of water into the saucepan with the rehydrated fruit and tapioca mixture.
  3. Bring the contents of the saucepan to a boil over medium-high heat, stirring occasionally to ensure even cooking.
  4. Once the mixture comes to a boil, reduce the heat to low and cover the saucepan. Allow the soup to simmer gently for about 1 hour or until the tapioca pearls turn transparent and the fruits are tender.
  5. While simmering, keep an eye on the soup’s consistency and add additional water if necessary to achieve the desired thickness. The soup should have a smooth and slightly thickened texture.
  6. Once the soup is ready, remove it from the heat and let it cool slightly. Optionally, you can serve the Holiday Fruit Soup warm or cold, depending on your preference.
  7. Before serving, sprinkle a dash of ground cinnamon on top of the soup to enhance its flavor and add a festive touch.
