Hard Cider Sauced Beans

Serve these beans with a side of veggies and some crusty bread to make a complete dinner.

YIELD: 4 servings

TOTAL PREP TIME: 10 minutes

TOTAL COOKING TIME: 20 to 30 minutes

 

 

INGREDIENTS

  • 3 cups (513 g) cooked pinto beans or 2 cans (15 ounces, or 425 g each), rinsed and drained
  • 1 bottle (12 ounces, or 355 ml) hard cider (*use gluten-free) or plain apple cider
  • 1/2 small onion, minced
  • 1 tablespoon (20 g) agave nectar
  • 1 tablespoon (11 g) mustard
  • 1/2 teaspoon liquid smoke
  • Salt and pepper, to taste

 

INSTRUCTIONS

  1. Add everything to a medium pot.
  2. Heat over medium heat, covered, for 20 to 30 minutes until the hard cider reduces.
  3. If the sauce is still a little thin, smash a few of the beans and mix in to thicken the broth.
