INGREDIENTS:
- 1 pound medium shrimp, peeled
- 1/2 pound skinless, boneless chicken breasts, cut into bite-size pieces
- 1/2 cup coconut oil
- 3/4 cup almond flour
- 2 cups chopped onions
- 1 cup chopped celery
- 1 cup chopped green pepper
- 1 tsp. ground cumin
- 1 tbsp. minced fresh garlic
- 1 tsp. fresh thyme, chopped
- 1/2 tsp. red pepper
- 6 cups chicken broth
- 2 cups diced tomatoes
- 3 cups sliced okra
- 1/2 cup fresh parsley, chopped
- 2 bay leaves
- 1 tsp. hot sauce
INSTRUCTIONS:
- In a large pot, sauté the chicken on high heat until browned. Remove the chicken from the pot and set it aside.
- Chop the onions, celery, and green pepper, and set them aside.
- Place coconut oil and almond flour in the pot. Stir well and brown to make a roux. When the roux is done, add the chopped vegetables. Sauté on low heat for 10 minutes.
- Slowly add the chicken broth to the pot, stirring constantly.
- Add the browned chicken and all other ingredients except the okra, shrimp, and parsley. Save those for the end.
- Cover the pot and simmer on low for half an hour. Then, remove the lid and cook for another half an hour, stirring occasionally.
- Add the shrimp, okra, and parsley to the pot. Continue to cook on low heat, uncovered, for 15 minutes.
