INGREDIENTS

  • 1 package (2-layer size) white cake mix
  • 2 oz. BAKER’S Semi-Sweet Chocolate, melted
  • 1 Tbsp. green food coloring
  • 4 oz. (1/2 of 8-oz. pkg.) Cream Cheese, softened
  • 1 jar (7 oz.) Marshmallow Creme
  • 1 tsp. vanilla
  • 1 tub (8 oz.) Whipped Topping, thawed

 

INSTRUCTIONS

  1. Heat the oven to 350°F (175°C).
  2. Prepare and bake the cake batter as directed on the package for 24 cupcakes, blending the melted chocolate and green food coloring into the batter before spooning it into prepared muffin cups. Cool the cupcakes completely.
  3. In a large bowl, beat the cream cheese, marshmallow creme, and vanilla with a mixer until blended. Add the whipped topping; beat just until blended.
  4. Spoon the whipped mixture into a resealable plastic bag. Cut a corner off one bottom corner of the bag; use it to pipe the whipped mixture onto the tops of the cupcakes.

  • Refrigerate the Frosting: After preparing the marshmallow creme frosting, refrigerate it for about 30 minutes before piping it onto the cupcakes. Chilling the frosting will make it firmer and easier to handle, resulting in neater and more defined swirls or decorations on top of the cupcakes.
