I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Yield: 3 servings, each with 6 grams of carbohydrates and 3 grams of fiber, for a total of 3 grams of usable carbs and 7 grams of protein.

 

INGREDIENTS

  • 1 tablespoon butter
  • 1/4 small onion, minced
  • 1 package (10 ounces) frozen, chopped spinach, thawed
  • 1/4 cup crumbled feta cheese
  • 1/4 cup cottage cheese

 

INSTRUCTIONS

  1. Melt the butter in a heavy skillet over medium heat. Add the minced onion and sauté for a minute until fragrant.
  2. Add the spinach to the skillet and sauté, stirring occasionally, for 5 to 7 minutes until the spinach is cooked and any excess liquid has evaporated.
  3. Add in the crumbled feta cheese and cottage cheese and stir until they start to melt and combine with the spinach.
  4. Cook for another minute or so until the cheese is melted and the spinach is heated through.
  5. Serve hot.
