Greek Beef Stew (Stifado)

Serves: 8

 

INGREDIENTS:

  • 4 large pieces of veal or beef osso bucco
  • 20 whole shallots, peeled
  • 3 bay leaves
  • 8 garlic cloves
  • 3 sprigs rosemary
  • 6 whole pimento
  • 5 whole cloves
  • 1/2 tsp ground nutmeg
  • 1/2 cup olive oil or avocado oil
  • 1/3 cup apple cider vinegar
  • 1 tbsp. salt
  • 2 cups tomato paste
  • 1/4 tsp black pepper

 

INSTRUCTIONS:

  1. In a bowl, mix the apple cider vinegar and tomato paste together. Set it aside for later use.
  2. In a large pot, place the veal or beef osso bucco, shallots, garlic, bay leaves, rosemary, pimento, cloves, and ground nutmeg.
  3. Pour the olive oil or avocado oil over the ingredients in the pot.
  4. Add the salt and the tomato paste mixture from step 1 into the pot.
  5. Cover the pot and bring it to a low boil over medium heat.
  6. Reduce the heat to low and simmer the mixture for 2 hours. Avoid opening the pot to stir; instead, shake the pot occasionally.
  7. Once the cooking time is complete, serve the osso bucco with brown rice or quinoa as desired.
