The history of Pfeffernuesse can be traced back to the Middle Ages when spices like cinnamon, cloves, and nutmeg were highly valued and used sparingly. These exotic spices were brought from the East and were considered luxurious and precious commodities. Initially, Pfeffernuesse cookies were a delicacy reserved for special occasions and festive celebrations.

Over time, the recipe for Pfeffernuesse evolved and became more widely known and enjoyed. INGREDIENTS

  • 1¼ cups butter, softened
  • 1¼ cups packed brown sugar
  • ¾ cup molasses
  • ½ cup water
  • 1 teaspoon anise extract
  • 6 cups cake flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground allspice
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground mace
  • ⅛ teaspoon pepper
  • ⅛ teaspoon ground cardamom
  • 2 cups finely chopped nuts

 

FOR GLAZE:

  • 1 cup confectioners’ sugar
  • 3 tablespoons 2% milk
  • ¼ teaspoon vanilla extract
  • Additional confectioners’ sugar

 

INSTRUCTIONS

  1. In a large bowl, cream the softened butter and brown sugar until the mixture becomes light and fluffy.
  2. Beat in the molasses, water, and anise extract until well combined.
  3. In a separate bowl, combine the cake flour, baking soda, salt, ground cinnamon, ground allspice, ground cloves, ground nutmeg, ground mace, pepper, and ground cardamom.
  4. Gradually add the dry ingredients to the creamed mixture, mixing well until all the ingredients are fully incorporated.
  5. Stir in the finely chopped nuts.
  6. Cover the dough and refrigerate it for 1 hour. Chilling the dough makes it easier to handle and helps the flavors meld together.
  7. Preheat your oven to 375°F (190°C).
  8. Roll the chilled dough into 1-inch balls and place them 2 inches apart on greased baking sheets.
  9. Bake the cookies in the preheated oven for 10-12 minutes or until they turn golden brown.
  10. While the cookies are baking, prepare the glaze by combining the confectioners’ sugar, milk, and vanilla extract in a shallow bowl.
  11. Once the cookies are baked, remove them from the oven and let them cool on wire racks for 5 minutes.
  12. Dip the tops of the warm cookies into the glaze, allowing any excess to drip off.
  13. After glazing, dip the cookies in additional confectioners’ sugar for a delightful finish.
  14. Allow the glazed cookies to cool completely on wire racks.
  15. Store the Glazed Pfeffernuesse in an airtight container to maintain their freshness.
