Ginger Stir Fry Broccoli

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Yield: 4 servings, each with 7 grams of carbohydrates and 3 grams of fiber, for a total of 4 grams of usable carbs and 4 grams of protein.

 

INGREDIENTS 

  • 2 to 3 tablespoons peanut oil or other bland oil
  • 2 cloves garlic, crushed
  • 1 bag (1 pound) frozen broccoli “cuts,” thawed
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon soy sauce

 

INSTRUCTIONS

  1. Heat the peanut oil in a wok or heavy skillet over high heat. Add the crushed garlic and thawed broccoli, and stir-fry for 7 to 10 minutes, or until the broccoli is tender-crisp.
  2. Stir in the grated ginger and soy sauce, stir-fry for just another minute, and serve.
