SERVES: 4

PREP TIME: 15 MINUTES, PLUS 1 HOUR TO MARINATE

COOKING TIME: 20 MINUTES

INGREDIENTS

  • 4 halibut fillets (about 6 ounces each)
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 4 leeks, cleaned and sliced (white and light green parts)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh cilantro or green onions, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Lemon wedges (for serving)

INSTRUCTIONS

  1. In a bowl, whisk together the low-sodium soy sauce, grated fresh ginger, minced garlic, honey, rice vinegar, and sesame oil to create the marinade.
  2. Place the halibut fillets in a zip-top bag or a shallow dish, and pour the ginger and soy sauce marinade over the fillets. Seal the bag (or cover the dish) and let the halibut marinate in the refrigerator for about 30 minutes, allowing the flavors to infuse.
  3. While the halibut is marinating, heat a large skillet over medium-high heat. Add the olive oil to the skillet.
  4. Once the skillet is hot, add the sliced leeks to the pan. Cook the leeks for about 5-7 minutes, or until they become tender and slightly caramelized. Season the leeks with a pinch of salt and black pepper. Set the cooked leeks aside.
  5. Preheat your oven to 400°F (200°C).
  6. Remove the halibut fillets from the marinade, allowing any excess marinade to drip off.
  7. In the same skillet you used for the leeks (or a different oven-safe skillet), sear the halibut fillets for about 2-3 minutes on each side, or until they develop a golden brown crust.
  8. Once seared, transfer the skillet (with the halibut) to the preheated oven and roast the halibut for an additional 5-7 minutes, or until the fish is opaque and flakes easily with a fork.
  9. While the halibut is roasting, you can warm the cooked leeks by briefly placing them back in the skillet over low heat.
  10. Carefully remove the halibut fillets from the oven and transfer them to a serving platter.
  11. Spoon the caramelized leeks over the top of the halibut fillets, creating a beautiful and flavorful presentation.
  12. Garnish the dish with chopped fresh cilantro or green onions and a sprinkle of sesame seeds for added color and texture.
  13. Serve the Ginger and Soy Sauce-Marinated Halibut with Leeks hot, accompanied by lemon wedges on the side, allowing each person to squeeze fresh lemon juice over their portion to brighten the flavors.
  14. Savor the exquisite blend of tender halibut, zesty ginger, savory soy sauce, and the sweet elegance of caramelized leeks in this delightful dish, a testament to the allure of Asian-inspired flavors.

CONCLUSION:

  • This recipe showcases the versatility and appeal of halibut, taking it to new heights with the exciting flavors of ginger and soy sauce. The addition of caramelized leeks provides a lovely sweetness and a visually pleasing element to the dish. Whether you’re a seafood enthusiast or a fan of Asian cuisine, this Ginger and Soy Sauce-Marinated Halibut with Leeks is sure to capture your taste buds with its rich and captivating flavors.
