INGREDIENTS

  • 5 cupfuls flour
  • 1 1/2 cupfuls Crisco (vegetable shortening)
  • 1/3 cupful ground almonds
  • 1 cupful sugar
  • 2 eggs
  • 2 yolks of eggs
  • 1 1/3 teaspoonfuls salt
  • Water

 

INSTRUCTIONS

  1. Begin by sifting the flour and ground almonds into a basin, ensuring even distribution of the almonds throughout the flour.
  2. Rub the Crisco into the flour and almonds until the mixture resembles coarse crumbs.
  3. Add salt and sugar to the mixture, ensuring they are evenly incorporated.
  4. Beat the eggs and yolks of eggs well, then add them to the mixture, combining thoroughly.
  5. Gradually add water to the mixture to create a stiff paste. The exact amount of water may vary, so add it sparingly until the desired consistency is achieved.
  6. Once the dough comes together, leave it in a cool place for two hours. This resting period allows the flavors to meld and the dough to firm up.
  7. After the resting period, roll out the German Paste and use it for pies and tartlets. Its rich and flavorful composition makes it an excellent base for a variety of fillings.
