German cuisine is renowned for its hearty and flavorful dishes, and German Meatballs and Gravy is no exception. This traditional recipe has its roots in the region of Königsberg, which is now part of modern-day Kaliningrad, Russia. It gained popularity in the 19th century and has since become a staple in German culinary traditions.

The key to the deliciousness of German Meatballs and Gravy lies in the combination of ground beef and pork. This blend of meats adds richness and depth of flavor to the meatballs, resulting in tender and succulent bites. The meat mixture is typically combined with breadcrumbs, onions, eggs, and a variety of herbs and spices to enhance the overall taste.

Once the meatballs are formed, they are simmered in a flavorful broth until cooked through. This step ensures that the meatballs remain tender and moist, allowing them to absorb the flavors of the broth.

The gravy, known as “Kapernsauce,” is the star of this dish. It is made from a creamy and tangy base, enriched with beef or vegetable broth, heavy cream, and the distinct flavor of capers. The capers lend a unique and zesty note to the gravy, balancing the richness and adding a delightful tang.

German Meatballs and Gravy is often served with boiled potatoes or noodles, allowing the savory gravy to envelop the starch and creating a satisfying and comforting meal.

INGREDIENTS

FOR THE MEATBALLS:

  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried marjoram
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, lightly beaten

FOR THE  GRAVY:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef or vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons capers, drained
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish

INSTRUCTIONS

  1. In a large bowl, combine the ground beef, ground pork, breadcrumbs, chopped onion, chopped parsley, dried marjoram, salt, black pepper, and beaten egg. Mix well until all the ingredients are evenly incorporated.
  2. Shape the mixture into meatballs, about the size of golf balls. Set the meatballs aside.
  3. In a large skillet, melt the butter over medium heat. Add the meatballs to the skillet, cooking them until browned on all sides. This helps to seal in the juices and develop a rich flavor.
  4. Remove the meatballs from the skillet and set them aside.
  5. In the same skillet, add the flour and cook it, stirring constantly, for about 1-2 minutes until it turns golden brown. This creates a roux, which will thicken the gravy.
  6. Gradually whisk in the beef or vegetable broth, ensuring there are no lumps. Bring the mixture to a simmer and cook for a few minutes until it thickens.
  7. Stir in the heavy cream and capers, allowing the flavors to meld together. Season with salt and black pepper to taste.
  8. Return the meatballs to the skillet, nestling them into the gravy. Cover the skillet and let the meatballs simmer in the gravy for about 15-20 minutes, or until they are cooked through.
  9. Garnish with chopped fresh parsley before serving.
  10. Serve the German Meatballs and Gravy hot, accompanied by boiled potatoes or noodles, allowing the flavorful gravy to complement the starch.
