About

Brenda Gantt

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Servings: 4

INGREDIENTS:

  • 1 1/2 cups Uncooked rotini pasta (Spirals)
  • 1 lb Beef round tip steak, cut 1/8 to 1/4 inch thick
  • Vegetable cooking spray
  • 2 Cloves garlic, crushed
  • 1/2 tsp Salt
  • 1/8 tsp Pepper (or 1/4 tsp)
  • 1 Tbs Water
  • 2 cups Frozen cut green beans (about 8 ounces)
  • 1/2 cup Jarred brown beef gravy

INSTRUCTIONS:

  1. Cook the rotini pasta according to the package directions. Once cooked, keep it warm.
  2. Stack the beef steaks and cut them lengthwise in half, then crosswise into 1/2-inch-wide strips.
  3. Spray a large non-stick skillet with vegetable cooking spray and place it over medium-high heat until hot. Add half of the beef strips and crushed garlic to the skillet. Stir-fry for 1 minute or until the outside surface of the beef is no longer pink. Make sure not to overcook. Season the beef with salt and pepper. Remove the cooked beef from the skillet and keep it warm. Repeat the same process with the remaining half of the beef.
  4. In the same skillet, heat the water until hot. Add the frozen green beans and cook for 4 or 5 minutes, stirring occasionally, until they are tender.
  5. Stir in the jarred brown beef gravy and cooked rotini pasta. Heat the mixture through.
  6. Return the cooked beef to the skillet and toss everything together to combine.
  7. Serve the Beef and Pasta Stir-Fry with Green Beans while it’s still warm.
