INGREDIENTS
- 2 tablespoons unsalted butter
- 2 cups basmati rice
- 2 ½ cups water
- 2 teaspoons salt
- 1 medium mango, pitted, peeled, and finely chopped
- 1 cup chopped roasted peanuts
- 4 green onions (white and tender green parts), finely chopped
INSTRUCTIONS
- Melt the butter in the pressure cooker over medium-high heat.
- Add the rice and stir to coat the grains with the butter.
- Add the water and salt.
- Lock the lid in place and cook at high pressure for 4 minutes.
- Quick release the pressure and remove the lid, tilting the pot away from you to avoid the escaping steam.
- Stir in the mango, peanuts, and green onions.
- Transfer to a serving bowl and serve immediately.
