I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

The sweet mango and crunchy peanuts give this simple dish an appealing sweet and salty quality. Basmati is a long-grain aromatic rice that is a staple of Indian cuisine.

SERVES 6

 

INGREDIENTS

  • 2 tablespoons unsalted butter
  • 2 cups basmati rice
  • 2 ½ cups water
  • 2 teaspoons salt
  • 1 medium mango, pitted, peeled, and finely chopped
  • 1 cup chopped roasted peanuts
  • 4 green onions (white and tender green parts), finely chopped

 

INSTRUCTIONS

  1. Melt the butter in the pressure cooker over medium-high heat.
  2. Add the rice and stir to coat the grains with the butter.
  3. Add the water and salt.
  4. Lock the lid in place and cook at high pressure for 4 minutes.
  5. Quick release the pressure and remove the lid, tilting the pot away from you to avoid the escaping steam.
  6. Stir in the mango, peanuts, and green onions.
  7. Transfer to a serving bowl and serve immediately.
