INGREDIENTS:

  • 2 tbsp. olive oil or avocado oil
  • 1 Zucchini, sliced
  • 1 cup torn fresh spinach
  • 2 tbsp. sliced green onions
  • 1 tsp. crushed garlic
  • Salt and pepper to taste
  • 1/3 cup coconut milk
  • 6 eggs

 

INSTRUCTIONS:

  1. Heat olive oil in a skillet over medium heat.
  2. Add zucchini to the skillet and cook until tender.
  3. Mix in the fresh spinach, sliced green onions, and crushed garlic.
  4. Season the vegetables with salt and pepper to taste. Continue cooking until the spinach is wilted.
  5. In a separate bowl, beat together the eggs and coconut milk.
  6. Pour the egg mixture into the skillet over the cooked vegetables.
  7. Reduce the heat to low, cover the skillet, and cook until the eggs are firm (approximately 5 to 7 minutes).
  8. Serve the egg and vegetable mixture hot and enjoy!

Here are some more variations of the recipe:

  1. Mushroom and Bell Pepper Frittata: Replace the zucchini with sliced mushrooms and diced bell peppers. Saute them with the spinach and green onions until tender. Proceed with the rest of the recipe as usual.
  2. Cheese and Herb Omelette: Add your favorite shredded cheese (such as cheddar, feta, or goat cheese) to the egg and coconut milk mixture before pouring it into the skillet. Sprinkle chopped fresh herbs like parsley, chives, or basil over the top while cooking.

  4. Tomato and Basil Omelette: Instead of spinach, use chopped fresh tomatoes and torn basil leaves in the skillet. Garnish with more fresh basil before serving.
  5. Mediterranean Frittata: Mix in chopped olives, sun-dried tomatoes, and crumbled feta cheese to give it a Mediterranean twist.
  6. Asparagus and Goat Cheese Frittata: Saute chopped asparagus along with the spinach and green onions. Add crumbled goat cheese to the egg mixture for a creamy and tangy flavor.
  7. Smoked Salmon and Dill Omelette: Fold in some smoked salmon pieces and chopped fresh dill to the egg mixture before cooking. This variation adds a deliciously savory and aromatic touch.
  1. Sundried Tomato and Feta Frittata: Add chopped sundried tomatoes and crumbled feta cheese to the egg mixture. The sweet and tangy flavors of the tomatoes and the salty creaminess of the feta will complement the vegetables beautifully.
