INGREDIENTS

  • 1 package (16 ounces) elbow macaroni
  • ¼ cup butter, cubed
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • 3 cups 2% milk
  • 2 cups (8 ounces) shredded cheddar cheese
  • 1½ cups (6 ounces) shredded Swiss cheese
  • ½ cup crumbled blue cheese
  • ½ cup grated Parmesan cheese

 

INSTRUCTIONS

  1. Cook the Macaroni: Cook the elbow macaroni according to the package directions until it reaches the desired tenderness. Drain the cooked macaroni and set it aside.
  2. Prepare the Cheese Sauce: In a Dutch oven over medium heat, melt the cubed butter. Stir in the all-purpose flour, salt, and pepper until the mixture becomes smooth. Gradually whisk in the milk, creating a creamy base for the cheese sauce. Bring the mixture to a boil while stirring constantly, and continue to cook and stir for about 2 minutes or until the sauce thickens.
  3. Add the Cheeses: Reduce the heat to low and add the shredded cheddar, shredded Swiss, crumbled blue cheese, and grated Parmesan. Stir the mixture continuously until all the cheeses have melted and the sauce becomes smooth and velvety.
  4. Combine the Macaroni and Cheese Sauce: Now that the cheese sauce is ready, add the drained macaroni to the sauce, stirring until the pasta is thoroughly coated with the creamy and cheesy goodness.
  5. Your Four Cheese Macaroni is now ready to be served!
