INGREDIENTS

  • 1/4 cup ground flaxseed
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups milk (dairy or plant-based)
  • 1 tablespoon maple syrup or honey
  • 2 tablespoons vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • Optional additions: mashed banana, applesauce, cinnamon, or fresh berries

 

INSTRUCTIONS

  1. In a blender or food processor, pulse the rolled oats until they resemble a coarse flour-like consistency.
  2. In a large mixing bowl, whisk together the oat flour, ground flaxseed, baking powder, and salt.
  3. In a separate bowl, whisk together the milk, maple syrup or honey, vegetable oil or melted butter, and vanilla extract.
  4. Create a well in the dry ingredients and pour the wet ingredients into it. Gently stir until just combined. Avoid overmixing to maintain a fluffy pancake texture.
  5. If desired, add mashed banana, applesauce, cinnamon, or fresh berries to the batter and gently fold them in.
  6. Allow the batter to rest for about 5-10 minutes to thicken slightly.
  7. Preheat a non-stick skillet or griddle over medium heat. Lightly grease the cooking surface with oil or butter.
  8. Pour a ladleful of batter onto the skillet to form a pancake. Cook until bubbles form on the surface, then flip the pancake and cook the other side until golden brown.
  9. Continue cooking the remaining batter in batches, adjusting the heat if needed to prevent burning.
