INGREDIENTS
- 4 cups port wine or apple cider, divided
- 3 cups fresh or frozen cranberries, thawed
- ¼ cup packed brown sugar
- 4 orange peel strips (3 inches)
- 3 cinnamon sticks (3 inches)
- 5 slices fresh peeled gingerroot
- 5 cardamom pods
- 5 whole cloves
- 4 cups apple cider or juice
- ½ cup blanched almonds
- ½ cup raisins
INSTRUCTIONS
- In a large saucepan, combine 3 cups of the wine (or apple cider) with the fresh or thawed cranberries, brown sugar, orange peel strips, cinnamon sticks, gingerroot slices, cardamom pods, and whole cloves.
- Cook the mixture over medium heat until the cranberries start to pop, which will take around 15 minutes. Slightly mash the cranberries during this process to release their flavors further. Allow the mixture to continue simmering for an additional 10 minutes.
- Once the cranberries have sufficiently softened and released their flavors, strain the mixture to remove the pulp, orange peel, and spices. You should be left with a flavorful spiced cranberry liquid.
- Return the spiced cranberry liquid to the saucepan and stir in the remaining 1 cup of wine (or apple cider), apple cider or juice, blanched almonds, and raisins.
- Bring the mixture to a boil, then reduce the heat and let it simmer, uncovered, for about 15 minutes. This allows the flavors to meld together and create a harmonious blend.
