Here’s a recipe brought over from Finland by pioneers who settled the area. We make this bread for a local festival that features foods from different countries.

Finnish bread, also known as “Finnish Rye Bread,” is a traditional bread that has been enjoyed in Finland for centuries. This hearty and flavorful bread is known for its dense texture, distinct taste, and rich cultural significance. Let’s dive into the history, story, and preparation of this beloved Finnish staple.

Bread holds a special place in Finnish culinary traditions and has been a dietary staple in the country for centuries. The history of Finnish bread can be traced back to ancient times when grains like rye and barley were cultivated in the region. The cold climate and agricultural practices of Finland influenced the choice of grains, resulting in the preference for rye bread.

Finnish bread has always played a significant role in Finnish culture and daily life. It has been a reliable source of sustenance, providing energy and nourishment to the Finnish people throughout the long and harsh winters. Baking bread was a communal activity, with families and communities coming together to prepare large batches of bread.

The recipe for Finnish bread has evolved over time, adapting to different regions and individual preferences. Finnish bread typically includes a combination of rye flour, whole wheat flour, and all-purpose flour. The use of rye flour gives the bread its distinctive taste and dense texture.

MAKES: 2 LOAVES (12 SLICES EACH)

 

INGREDIENTS

  • 1 package (¼ ounce) active dry yeast
  • 2 cups warm water (110° to 115°F / 43° to 46°C)
  • 1 cup whole wheat flour
  • ¼ cup butter, melted (divided)
  • 1 tablespoon brown sugar
  • 2 teaspoons salt
  • 4½ to 5 cups all-purpose flour

 

INSTRUCTIONS

  1. In a large bowl, dissolve the yeast in warm water. Add the whole wheat flour, 2 tablespoons of melted butter, brown sugar, salt, and 2 cups of flour. Beat the mixture until smooth. Gradually add enough remaining flour to form a soft dough.
  2. Turn the dough onto a floured surface and knead it for about 6-8 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, turning it once to grease the top. Cover the bowl and let the dough rise in a warm place until it has doubled in size, which usually takes about 1 hour.
  3. Once the dough has risen, punch it down and shape it into two 6-inch rounds. Place the rounds on a greased baking sheet. Cut slashes in the tops of the loaves using a knife. Cover them and let them rise again in a warm place until doubled, which takes about 40 minutes.
  4. Preheat the oven to 400°F (200°C). Bake the loaves for 40-45 minutes or until they turn golden brown. Brush the tops with the remaining melted butter.
