PREP: 20 MIN. + RISING
BAKE: 40 MIN.
MAKES: 2 LOAVES (12 SLICES EACH)
INGREDIENTS
- 1 package (¼ ounce) active dry yeast
- 2 cups warm water (110° to 115°F / 43° to 46°C)
- 1 cup whole wheat flour
- ¼ cup butter, melted (divided)
- 1 tablespoon brown sugar
- 2 teaspoons salt
- 4½ to 5 cups all-purpose flour
INSTRUCTIONS
- In a large bowl, dissolve the yeast in warm water. Add the whole wheat flour, 2 tablespoons of melted butter, brown sugar, salt, and 2 cups of flour. Beat the mixture until smooth. Gradually add enough remaining flour to form a soft dough.
- Turn the dough onto a floured surface and knead it for about 6-8 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, turning it once to grease the top. Cover the bowl and let the dough rise in a warm place until it has doubled in size, which usually takes about 1 hour.
- Once the dough has risen, punch it down and shape it into two 6-inch rounds. Place the rounds on a greased baking sheet. Cut slashes in the tops of the loaves using a knife. Cover them and let them rise again in a warm place until doubled, which takes about 40 minutes.
- Preheat the oven to 400°F (200°C). Bake the loaves for 40-45 minutes or until they turn golden brown. Brush the tops with the remaining melted butter.
