This extra-rich fauxtatoes recipe comes from Adele Hite, and it is the basis for the “grits” part of her Low-Carb Shrimp and Grits recipe.
Yield: 6 generous servings, each with 6 grams of carbohydrates and 2 grams of fiber, for a total of 4 grams of usable carbs and 4 grams of protein.
INGREDIENTS
- 1 large head cauliflower
- 1/3 cup cream
- 4 ounces cream cheese
- 1 tablespoon butter
- Salt and pepper
INSTRUCTIONS
- Simmer the cauliflower in water with the cream added to it until it is very soft. Drain thoroughly.
- Put the still-warm cauliflower in a food processor with the cream cheese, butter, and salt and pepper to taste, and process until smooth. You may need to do this in batches.
