Serves :4

 

INGREDIENTS:

  • 2 cups spinach
  • 2 cloves garlic
  • 3 tbsp cashews
  • 3 tbsp dried currants
  • Olive oil or avocado oil

 

INSTRUCTIONS:

  1. Wash the spinach thoroughly and trim off the stems.
  2. Steam the spinach for a few minutes until it wilts and becomes tender.
  3. Peel and slice the garlic cloves.
  4. In a frying pan, pour a few tablespoons of olive oil or avocado oil to cover the bottom of the pan.
  5. Heat the pan on medium heat and sauté the sliced garlic for 1-2 minutes until it becomes fragrant and lightly golden.
  6. Add the cashews and dried currants to the pan, and continue to sauté for another minute, allowing the flavors to meld together.
  7. Now, add the steamed spinach to the pan and mix well, coating it with the oil, garlic, cashews, and currants.
  8. Season with salt to taste.
  9. Remove the sautéed spinach from the heat and transfer it to a serving dish.
  10. Serve hot as a delicious and nutritious side dish or enjoy it on its own as a light and flavorful meal.
