Escalloped tomatoes are a timeless dish that transforms humble tomatoes into a comforting and flavorful creation. This classic recipe features ripe tomatoes combined with a hearty blend of breadcrumbs, herbs, and cheese, resulting in a dish that brings together the essence of garden-fresh produce with a touch of indulgence. With its simplicity and heartwarming flavors, escalloped tomatoes offer a taste of nostalgia and comfort in every spoonful.

 

 

INGREDIENTS

  • 6-8 ripe tomatoes, peeled and sliced
  • 1 cup breadcrumbs (fresh or dry)
  • 1/2 cup grated cheddar cheese (or cheese of your choice)
  • 1/4 cup chopped fresh basil or parsley
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • Butter or cooking spray, for greasing the baking dish

 

INSTRUCTIONS

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Tomatoes:
    • Peel the ripe tomatoes by making a small ‘X’ at the bottom of each tomato and blanching them in boiling water for about 30 seconds. Transfer the tomatoes to a bowl of ice water, and the skins should peel off easily. Slice the peeled tomatoes into 1/4-inch thick rounds.
  3. Layer the Tomatoes:
    • Grease a baking dish with butter or cooking spray to prevent sticking.
    • Arrange a layer of sliced tomatoes at the bottom of the baking dish, slightly overlapping them.
  4. Add Breadcrumbs and Cheese:
    • In a bowl, mix the breadcrumbs, grated cheddar cheese, chopped fresh basil or parsley, minced garlic, and a drizzle of olive oil. Season the mixture with a pinch of salt and freshly ground black pepper.
  5. Create Layers:
    • Sprinkle a portion of the breadcrumb mixture over the layer of sliced tomatoes in the baking dish.
  6. Repeat Layers:
    • Create another layer of sliced tomatoes, followed by another layer of the breadcrumb mixture. Continue layering until you use up all the tomatoes and breadcrumb mixture.
  7. Finish and Bake:
    • Finish with a final layer of the breadcrumb mixture on top.
    • Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the top is golden brown and the tomatoes are tender.
  8. Serve:
    • Once the escalloped tomatoes are done, remove them from the oven and let them cool slightly before serving.

 

TIPS:

  • Bread Crumbs: You can use either fresh breadcrumbs made from day-old bread or dry breadcrumbs. Fresh breadcrumbs provide a slightly softer texture, while dry breadcrumbs offer more crunch.
  • Cheese Varieties: Feel free to experiment with different cheese varieties to suit your taste. Sharp cheddar, Parmesan, or a combination of cheeses can all work well.
  • Tomato Varieties: Choose ripe and flavorful tomatoes for the best results. Different tomato varieties can yield slightly different flavors and textures, so select ones that are in season and bursting with freshness.
  • Herb Options: While basil and parsley are common choices, you can also use other fresh herbs like oregano or thyme to enhance the flavor of the dish.
