INGREDIENTS

  • 4 tablespoonfuls melted Crisco (shortening)
  • 1 large eggplant
  • 3 small onions
  • 2 garlic cloves
  • 3 tomatoes
  • 1 green pepper
  • Salt and pepper to taste

 

INSTRUCTIONS

  1. Begin by slicing the eggplant into thin slices. Also, slice the onions, garlic cloves, tomatoes, and green pepper quite thin.

 

For Layering:

  1. Preheat the oven to a moderate temperature.
  2. Grease a casserole dish generously with melted Crisco.
  3. Arrange the sliced eggplant, onions, garlic, tomatoes, and green pepper in the casserole dish, layering them alternately. Season each layer with salt and pepper to enhance the flavors.
  4. Continue layering until all the ingredients are used, creating a beautiful mosaic of flavors and colors.
  5. Once the layers are complete, pour the remaining melted Crisco over the top of the layered vegetables.

 

For Baking:

  1. Cover the casserole dish with a lid or aluminum foil to seal in the flavors and moisture.
  2. Cook the casserole over a slow fire or in the preheated moderate oven until the eggplant becomes tender. This slow cooking process allows the flavors to meld and develop.
