I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

INGREDIENTS:

  • 3 eggs
  • 1/2 cup of coconut flour
  • 1 cup of coconut milk
  • 1 crushed garlic clove

 

INSTRUCTIONS:

  1. In a mixing bowl, crack the eggs and whisk them together until well beaten.
  2. Add the coconut flour and coconut milk to the beaten eggs. Stir well to combine and form a smooth batter.
  3. Crush the garlic clove and add it to the batter. Mix it in thoroughly to distribute the garlic flavor.
  4. Heat a non-stick skillet over medium heat and lightly grease it with oil or cooking spray.
  5. Pour the batter into the skillet, spreading it evenly to form an omelet shape.
  6. Cook the omelet for a few minutes on one side until it starts to set and turn golden brown.
  7. Carefully flip the omelet to cook the other side until it’s fully cooked and slightly crispy on the edges.
  8. Once the omelet is cooked through, transfer it to a serving plate.
  9. Optionally, you can fold the omelet in half or roll it up before serving.

VARIATIONS:
