INGREDIENTS:

  • 6 Eggs
  • 4 1/2 cups Flour

 

INSTRUCTIONS:

  1. Put the flour in a large mixing pan or on a clean work surface. Create a well in the center of the flour.
  2. Crack the eggs into the well in the flour.
  3. Start the machine or use your hands to mix and knead the dough. Ensure that the machine is not working too hard. If needed, add a tablespoon of cold water at a time until the dough is kneading without trouble.
  4. Remove the dough from the machine or continue kneading by hand once the kneading process has stopped. The dough should be smooth and elastic.
  5. Check the dough’s consistency before rolling it out. Insert a finger into the center of the dough; if it comes out almost dry, the dough is ready to use. If it feels too dry, add a small amount of water and knead it in.
  6. Take small pieces of the dough at a time and roll them out to the desired thickness for the noodles. Slice the rolled-out dough lengthwise into the desired noodle width.
  7. Flour the noodles lightly to prevent sticking and set them aside. You can hang them on a drying rack if available.
  8. To cook the fresh noodles, bring a large pot of salted water to a boil.
  9. Add the pasta to the boiling water and bring it back to a boil. Cook the pasta uncovered for 5 to 20 seconds after the water returns to a boil. Be careful not to overcook the pasta as fresh noodles cook quickly.
  10. Drain the cooked noodles promptly and serve them as desired.

 

Here are a few variations of the fresh noodle recipe:

  1. Spinach Noodles: Add a handful of fresh spinach leaves to the dough mixture before kneading. Blend the spinach leaves with the eggs before incorporating them into the flour. This will give your noodles a vibrant green color and a subtle spinach flavor.
  2. Tomato Noodles: Replace some of the flour with tomato paste or tomato powder to infuse the noodles with a tomato flavor and a reddish hue. Adjust the amount of liquid as needed to maintain the proper dough consistency.
  3. Herb-infused Noodles: Incorporate dried herbs like basil, oregano, or thyme into the flour mixture before adding the eggs. This will impart a delightful herbaceous flavor to your noodles.
  4. Whole Wheat Noodles: Substitute a portion of the all-purpose flour with whole wheat flour to make healthier whole wheat noodles. Keep in mind that whole wheat flour may require slightly more liquid to achieve the desired dough consistency.
  5. Spicy Noodles: Add chili flakes or cayenne pepper to the flour mixture for a kick of heat in your noodles. Adjust the amount according to your preferred level of spiciness.
  6. Garlic and Pepper Noodles: Mix in minced garlic and freshly cracked black pepper to the dough for a savory and aromatic twist. This variation pairs well with Asian-inspired sauces and stir-fries.
  7. Squid Ink Noodles: Replace a portion of the liquid in the dough with squid ink to create striking black noodles. Squid ink can typically be found in specialty food stores or online. It adds a unique flavor reminiscent of the ocean.
