INGREDIENTS:
- 6 Eggs
- 4 1/2 cups Flour
INSTRUCTIONS:
- Put the flour in a large mixing pan or on a clean work surface. Create a well in the center of the flour.
- Crack the eggs into the well in the flour.
- Start the machine or use your hands to mix and knead the dough. Ensure that the machine is not working too hard. If needed, add a tablespoon of cold water at a time until the dough is kneading without trouble.
- Remove the dough from the machine or continue kneading by hand once the kneading process has stopped. The dough should be smooth and elastic.
- Check the dough’s consistency before rolling it out. Insert a finger into the center of the dough; if it comes out almost dry, the dough is ready to use. If it feels too dry, add a small amount of water and knead it in.
- Take small pieces of the dough at a time and roll them out to the desired thickness for the noodles. Slice the rolled-out dough lengthwise into the desired noodle width.
- Flour the noodles lightly to prevent sticking and set them aside. You can hang them on a drying rack if available.
- To cook the fresh noodles, bring a large pot of salted water to a boil.
- Add the pasta to the boiling water and bring it back to a boil. Cook the pasta uncovered for 5 to 20 seconds after the water returns to a boil. Be careful not to overcook the pasta as fresh noodles cook quickly.
- Drain the cooked noodles promptly and serve them as desired.
Here are a few variations of the fresh noodle recipe:
- Spinach Noodles: Add a handful of fresh spinach leaves to the dough mixture before kneading. Blend the spinach leaves with the eggs before incorporating them into the flour. This will give your noodles a vibrant green color and a subtle spinach flavor.
- Tomato Noodles: Replace some of the flour with tomato paste or tomato powder to infuse the noodles with a tomato flavor and a reddish hue. Adjust the amount of liquid as needed to maintain the proper dough consistency.
