INGREDIENTS:
- 8 eggs
- 1 cup diced green bell pepper
- 1 cup diced onion
- 1 cup spinach
- 1/4 tsp. salt
- 1/8 tsp. ground black pepper
- 2 tbsp. water
INSTRUCTIONS:
- Preheat the oven to 350 degrees F (175 degrees C). Grease 8 muffin cups with oil to prevent sticking.
- In a large bowl, beat the eggs together until well combined.
- Add the diced green bell pepper, onion, spinach, salt, black pepper, and water to the eggs. Mix everything thoroughly to evenly distribute the ingredients.
- Pour the egg mixture into the prepared muffin cups, filling each cup about 2/3 full.
- Place the muffin tin in the preheated oven and bake until the muffins are set in the middle, about 15-20 minutes.
- Once the muffins are done, remove them from the oven and let them cool slightly in the muffin tin.
- Carefully remove the egg muffins from the muffin tin and serve them warm.
