INGREDIENTS:

  • 8 eggs
  • 1 cup diced green bell pepper
  • 1 cup diced onion
  • 1 cup spinach
  • 1/4 tsp. salt
  • 1/8 tsp. ground black pepper
  • 2 tbsp. water

 

INSTRUCTIONS:

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease 8 muffin cups with oil to prevent sticking.
  2. In a large bowl, beat the eggs together until well combined.
  3. Add the diced green bell pepper, onion, spinach, salt, black pepper, and water to the eggs. Mix everything thoroughly to evenly distribute the ingredients.
  4. Pour the egg mixture into the prepared muffin cups, filling each cup about 2/3 full.
  5. Place the muffin tin in the preheated oven and bake until the muffins are set in the middle, about 15-20 minutes.
  6. Once the muffins are done, remove them from the oven and let them cool slightly in the muffin tin.
  7. Carefully remove the egg muffins from the muffin tin and serve them warm.

VARIATIONS OF EGG MUFFINS
