Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (7 ounces) chipotle peppers in adobo sauce
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

  • 1 cup chicken broth
  • 8-10 corn tortillas

  6. Using an immersion blender or a regular blender, puree the sauce until smooth.
  7. Return the chicken to the skillet and stir to coat with the sauce.
  8. Warm the tortillas in a dry skillet or on a griddle.
  9. To assemble the tacos, place a spoonful of the chicken and sauce mixture onto each tortilla, and top with your desired toppings.
