Delicate Whole-Wheat Pasta

INGREDIENTS:
  • 1 cup Flour, whole-wheat pastry
  • 1 tsp Salt
  • 1 cup Flour, unbleached
  • 2 Eggs
  • 2 tsp Olive oil
  • 2 Tbs Water; (more as needed)

 

INSTRUCTIONS:
  1. Sift flours and salt together into a large mixing bowl or food processor.
  2. Add the eggs and oil, and work together until you have a moderately sticky lump (if working by hand) or a grainy mixture (if working with a food processor).
  3. Add 2 Tbs water, and work the dough until you have a fairly firm lump. Add a little more water or flour as needed to get a good-feeling texture. If working by hand, don’t try to reincorporate the flakes that fall off the main lump.
  4. Knead the dough gently for 5 minutes, wrap it in a damp dish towel, and let it rest for 30 minutes to an hour.
  5. Divide the dough into 8 parts and roll out very thin with a rolling pin or pasta roller. It will thicken and shrink a bit after rolling, so roll a little thinner than you want it to end up.
  6. Makes 24 lasagne noodles or enough spaghetti/fettucine for 8 servings.

 

Here are a few variations of the recipe:

  1. Herb-infused Pasta: Add dried herbs such as basil, oregano, or thyme to the flour mixture before combining with the wet ingredients. This will give your pasta a flavorful twist.
  2. Spinach Pasta:  Blend a handful of fresh spinach leaves with the wet ingredients before mixing with the flour. This will result in green-colored pasta with a hint of spinach flavor.
  3. Whole Grain Pasta: Replace the whole-wheat pastry flour with whole grain flour or a mixture of whole grain and all-purpose flour for a heartier and nuttier taste.
  4. Flavored Pasta: Experiment with adding different ingredients to the dough, such as tomato paste, beet puree, or squid ink, to create pasta with unique colors and flavors.
  5. Gluten-Free Pasta: Substitute the wheat flour with a gluten-free flour blend, such as rice flour or almond flour, to make gluten-free pasta suitable for individuals with gluten sensitivities.
  6. Eggless Pasta: For a vegan-friendly option, omit the eggs and increase the amount of water and oil slightly to compensate. You may need to adjust the texture by adding more flour as needed.
  7. Lemon Pepper Pasta: Add freshly grated lemon zest and cracked black pepper to the flour mixture for a bright and zesty pasta flavor.
  8. Garlic and Herb Pasta: Mix in minced garlic, dried Italian herbs (such as basil, oregano, and thyme), and a pinch of red pepper flakes to the dough for a savory and aromatic pasta.
  9. Mushroom Pasta: Incorporate finely chopped dried mushrooms or mushroom powder into the flour mixture to infuse the pasta with a rich umami flavor.
  10. Cheese Pasta: Mix grated Parmesan or other hard cheeses into the dough for a cheesy pasta variation. You can also sprinkle grated cheese on top of the rolled-out dough before cutting it into noodles.
  11. Spicy Pasta: Add a teaspoon of chili flakes or a pinch of cayenne pepper to the flour mixture for a kick of heat in your pasta.
  12. Squash Pasta: Substitute a portion of the flour with pumpkin or butternut squash puree to create a colorful and subtly sweet pasta.
  13. Herbed Whole Wheat Pasta: Use whole wheat flour and incorporate a blend of fresh herbs such as parsley, basil, and thyme into the dough for a wholesome and flavorful pasta option.
