  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (adjust for desired spiciness)
  • 1 teaspoon paprika
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish
  • Cooked rice, for serving

 

INSTRUCTIONS 

  1. In a small bowl, mix the curry powder, ground cumin, ground coriander, ground turmeric, cayenne pepper, and paprika to create the spice blend.
  2. Season the chicken pieces with salt and pepper. Rub the spice blend over the chicken, making sure it’s evenly coated. Let the chicken marinate for at least 15-30 minutes to allow the flavors to meld.
  3. In a large skillet or Dutch oven, heat the vegetable oil over medium-high heat.
  4. Add the chopped onion, minced garlic, and grated ginger to the pan. Sauté for a few minutes until the onion becomes translucent and the mixture becomes fragrant.
