As trade routes expanded and cultures interacted, spices like curry powder made their way into different culinary traditions, resulting in the creation of dishes like Curried Cod.

Cod, a versatile and widely available fish, became a popular choice for currying due to its mild flavor and firm texture that can hold up well in flavorful sauces. The marriage of cod and curry showcased the ability of spices to transform simple ingredients into a symphony of taste.

INGREDIENTS

  • 2 lbs. cod fish, cut into pieces (2 inches square)
  • 1/4 cupful Crisco (shortening)
  • 2 cupfuls white stock (chicken or fish stock)
  • 1 tablespoonful flour
  • 2 teaspoonfuls curry powder
  • 1 medium-sized onion, sliced
  • 1 tablespoonful lemon juice
  • Salt, pepper, and red pepper to taste
  • 2 cupfuls plain boiled rice
  • 2 tablespoonfuls chopped coconut

 

INSTRUCTIONS

  1. Prepare the Cod:
    • Wash and dry the cod fish pieces thoroughly.
    • In a saucepan, melt the Crisco over medium heat.
    • Lightly fry the cod fish pieces in the melted Crisco until they are just cooked. Remove the cod and set aside.
  2. Create the Curry Sauce:
    • In the same saucepan, add the sliced onion, flour, and curry powder. Stir and cook for about ten minutes, ensuring the onion does not become overly browned.
    • Gradually pour in the white stock while stirring to create a smooth sauce.
    • Add the chopped coconut to the sauce and bring it to a boil. Simmer for about twenty minutes to allow the flavors to meld.
  3. Season and Cook the Cod:
    • Strain the curry sauce to remove any solids, then return the sauce to the saucepan.
    • Stir in the lemon juice, salt, pepper, and red pepper to taste.
    • Gently add the cooked cod fish pieces to the sauce, making sure they are well-coated.
    • Cover the saucepan and cook the curry over low heat for approximately thirty minutes, stirring occasionally to prevent sticking.
  4. Serve:
    • Arrange the cooked plain boiled rice on a serving platter.
    • Carefully place the curried cod fish on top of the rice.
  5. Garnish and Enjoy:
    • Garnish the dish with additional chopped coconut.
    • Serve the Curried Cod alongside the rice, allowing diners to savor the flavors and textures of this aromatic and flavorful creation.

 

NOTE: If using leftover cold fish, skip the initial frying step and add the cold fish directly to the sauce for reheating.
