INGREDIENTS

For the Chocolate Cupcakes:

  • 2/3 cup Cocoa Powder
  • 1 tsp Baking Soda
  • 1 cup Boiling Water
  • 1/2 cup Melted Butter
  • 5 tbsp Vegetable Oil
  • 1 1/2 cups White Sugar
  • 2 tsp Vanilla Extract
  • 1/2 tsp Salt
  • 4 Eggs
  • 1/2 cup Heavy Cream
  • 1 1/2 cups All-Purpose Flour

 

For the Mint Chocolate Chip Buttercream:

  • 1 1/2 cups Butter, Softened
  • 2 tsp Mint Extract
  • 2 tsp Vanilla Extract
  • 5 cups Powdered Sugar
  • 1 tbsp Whole Milk
  • 1 cup Mini Chocolate Chips
  • Green Food Coloring
  • Pinch of Salt, To Taste

 

INSTRUCTIONS

  1. Preheat the oven to 350 degrees F (175 degrees C). In a large mixing bowl, mix the cocoa powder and baking soda. Pour the boiling water over the mixture and stir until combined.
  2. In a separate large mixing bowl, mix the melted butter, vegetable oil, sugar, vanilla extract, salt, and eggs until combined. Blend in the cocoa mixture and heavy cream.
  3. Gradually stir in the all-purpose flour a little at a time and stir until just combined.
  4. Divide the cupcake batter evenly between lined cupcake bakers. Bake for 20-22 minutes or until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool completely.
  5. For the Mint Chocolate Chip Buttercream: In a mixing bowl, stir the softened butter until light and fluffy. Stir in the mint and vanilla extracts.
  6. Gradually stir in the powdered sugar a little at a time, adding milk as needed to achieve the desired consistency.
  7. Stir in green food coloring if desired to give the frosting a minty hue. Fold in the mini chocolate chips for added texture and flavor.
  8. Using an ice cream scoop, generously scoop the mint chocolate chip buttercream onto the cooled cupcakes, spreading it out to create a beautifully frosted top.
