The humble blend of water, flour, eggs, and Crisco undergoes a magical transformation in the oven to create these delectable treats. As we unravel the history and creation of Cream Puffs, we embark on a journey through the evolution of pastry and the art of elevating a few simple ingredients into an elegant dessert.

The origins of Cream Puffs trace back to the Renaissance era, when the art of choux pastry (pâte à choux) was first developed in France. This dough, known for its unique ability to puff up and form an airy interior, became the foundation for Cream Puffs. Over the years, variations of choux pastry spread throughout Europe, each region adding its own touch to the delectable treat.

Cream Puffs gained particular popularity in the late 19th century, with a renewed interest in confectionery and baking techniques. The delightful combination of crispy exterior and soft interior, paired with a luscious cream filling, elevated Cream Puffs to a dessert fit for both everyday enjoyment and special occasions.

INGREDIENTS

  • 1 cupful water
  • 1 cupful flour
  • 4 eggs
  • 5 tablespoonfuls Crisco (shortening)
  • 1/4 teaspoonful salt

 

INSTRUCTIONS

Creating the Choux Pastry:

  1. Heating Crisco and Water: In a small saucepan, combine the Crisco and water. Bring the mixture to a boiling point.
  2. Adding Flour and Salt: Quickly add the flour and salt to the boiling mixture. Stir vigorously with a wooden spoon until the mixture comes together and leaves the sides of the pan.
  3. Cooling and Incorporating Eggs: Remove the saucepan from the heat and allow the mixture to cool slightly (not cold). Add the eggs, one at a time, beating thoroughly after each addition. Let the mixture rest in a cool place for about an hour.
  4. Preparing for Baking: Transfer the choux pastry mixture into a forcing bag fitted with a tube. Pipe the mixture onto a greased tin in small rounds, creating the base for the Cream Puffs.
  5. Baking: Bake the choux pastry rounds in a hot oven for approximately forty minutes until they turn golden brown and puff up.

 

Assembling Cream Puffs:

  1. Filling with Whipped Cream: Once the Cream Puffs have cooled, split them open on one side. Fill each Cream Puff with whipped cream that has been sweetened and flavored according to your preference.

 

Making Eclairs (Optional):

  1. Forming Eclairs: To make eclairs, pipe the choux pastry mixture onto tins in strips approximately three and a half inches long, leaving some distance between them.
  2. Baking and Filling: Brush the tops of the eclairs with beaten egg and bake in a moderate oven for about thirty minutes. After baking, cut open one side of the eclairs and fill them with cream, then dip the top into chocolate icing for added flavor and appeal.
