• 1 1/2 pounds broccoli, fresh
• 2 cups water
• 3/4 tsp. salt
• Pepper to taste
• 1/2 cup tapioca flour, mixed with 1 cup cold water
• 1/2 cup coconut cream
• 1/2 cup low-fat farmers cheese
INSTRUCTIONS:
- Steam or boil broccoli until it becomes tender.
- In the top of a double boiler, combine 2 cups of water and coconut cream.
- Add salt, low-fat farmers cheese, and pepper to the double boiler. Heat until the cheese melts.
- Add the cooked broccoli to the cheese mixture and stir.
- In a small bowl, mix tapioca flour with 1 cup of cold water to form a slurry.
- Stir the tapioca slurry into the cheese mixture in the double boiler.
- Continue to heat the soup until it thickens.
- Season with additional salt and pepper to taste.
- Serve hot and enjoy!
