Cream of Broccoli Soup

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

INGREDIENTS:

• 1 1/2 pounds broccoli, fresh

• 2 cups water

• 3/4 tsp. salt

• Pepper to taste

• 1/2 cup tapioca flour, mixed with 1 cup cold water

• 1/2 cup coconut cream

• 1/2 cup low-fat farmers cheese

 

INSTRUCTIONS:

  1. Steam or boil broccoli until it becomes tender.
  2. In the top of a double boiler, combine 2 cups of water and coconut cream.
  3. Add salt, low-fat farmers cheese, and pepper to the double boiler. Heat until the cheese melts.
  4. Add the cooked broccoli to the cheese mixture and stir.
  5. In a small bowl, mix tapioca flour with 1 cup of cold water to form a slurry.
  6. Stir the tapioca slurry into the cheese mixture in the double boiler.
  7. Continue to heat the soup until it thickens.
  8. Season with additional salt and pepper to taste.
  9. Serve hot and enjoy!
