INGREDIENTS

  • 1 tablespoonful melted Crisco (shortening)
  • 1 can crushed corn
  • 1 cupful flour
  • 1 teaspoonful baking powder
  • 2 teaspoonfuls salt
  • 1/4 teaspoonful white pepper
  • 3 tablespoonfuls milk

 

INSTRUCTIONS

  1. Put the crushed corn into a mixing bowl.
  2. Add the melted Crisco, salt, white pepper, flour, baking powder, and milk to the bowl.
  3. Mix all the ingredients together until they are well combined, forming a smooth batter.

 

For Frying:

  1. Preheat a griddle and grease it with Crisco to prevent sticking.
  2. Drop spoonfuls of the corn batter onto the Criscoed griddle, creating individual fritters.
  3. Cook the fritters on the griddle until they are golden brown on both sides. The fritters should be crispy on the outside and tender on the inside.
  4. Once the fritters are cooked to perfection, remove them from the griddle.

 

To Serve:

  1. Serve the Corn Fritters hot as a palatable accompaniment to dishes like roast chicken, offering a delightful contrast in flavor and texture.
