There is something so right about a fragrant, juicy peach, and your baby should begin to appreciate them from the moment he or she can eat solid foods. Peaches are high in vitamins and minerals and just plain delicious. I prefer making baby food with peaches with orange flesh, but you can certainly use white peaches, donut peaches, or your favorite variety.
MAKES ABOUT 4 CUPS
INGREDIENTS
- 6 medium peaches, halved and pitted
- 1 cup filtered water or juice
INSTRUCTIONS
- Combine the peaches and water in the pressure cooker.
- Lock the lid in place and cook at high pressure for 6 minutes.
- Release the pressure naturally and remove the lid, tilting the pot away from you to avoid the escaping steam.
- Using a slotted spoon, transfer the fruit to a food mill or sieve set over a bowl and press the mixture through.
- Cool completely and store in airtight containers in the refrigerator for up to 3 days or in the freezer for up to 2 months.
GREAT COMBINATIONS:
For each of these combinations, release the pressure naturally and strain the fruit.
- Combine 4 medium peaches, halved and pitted; 2 large apricots, halved and pitted; and 1 cup of water or juice.
Cook at high pressure for 6 minutes. - Combine 4 medium peaches, halved and pitted; 1 cup of pitted cherries; and 1 cup of water or juice. Cook at high pressure for 6 minutes.
- Combine 4 medium peaches, halved and pitted; 1 cup of blueberries, picked over for stems; and 1 cup of water or juice. Cook at high pressure for 6 minutes.
