COOKING FOR BABY-APPLES

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Begin with soft apple varieties and then graduate to your favorite cooking apples. Golden Delicious apples are a great way to begin. They fall apart in the pressure cooker, and then it’s just a matter of pureeing them in the food processor or blender. Start off using filtered water and then later add apple or other fruit juices as your liquid.

MAKES ABOUT 4 CUPS

 

INGREDIENTS

  • 6 medium Golden Delicious apples, peeled, cored, and quartered
  • 1 cup filtered water

 

INSTRUCTIONS

  1. Combine the apples and water in the pressure cooker.
  2. Lock the lid in place and cook at high pressure for 4 minutes.
  3. Quick release the pressure and remove the lid, tilting the pot away from you to avoid the escaping steam.
  4. Using a slotted spoon, transfer the apples to a food processor.
  5. Process the apples, adding some of the cooking liquid to the mixture to thin it. If your baby is just beginning solid foods, the apples should be smooth and loose. Once your baby is used to eating solids, use less of the cooking liquid to thin the apples.
  6. Cool the apples completely and store in airtight containers in the refrigerator for up to 3 days or in the freezer for up to 2 months.

GREAT COMBINATIONS:
For each of these combinations, quick release the pressure and strain the fruit.

  • Combine 4 medium apples, peeled, cored, and quartered; 6 dried apricots; and 1 cup of water or juice. Cook at high pressure for 6 minutes.
  • Combine 4 medium apples, peeled, cored, and quartered; 1 cup of pitted cherries; and 1 cup of water or juice. Cook at high pressure for 6 minutes.
  • Combine 4 medium apples, peeled, cored, and quartered; 1 cup of blueberries, picked over for sterns; and 1 cup of water or juice. Cook at high pressure for 6 minutes.
  • Combine 4 medium apples, peeled, cored, and quartered; 2 medium pears, peeled, cored, and quartered; and 1 cup of water or juice. Cook at high pressure for 4 minutes.
